November is World Vegan Month, and at Énergie Fitness, we’re celebrating all things plant-powered! Whether you’re exploring vegan eating for the first time or already a plant-based pro, this High-Protein Vegan Burrito Bowl will keep you fuelled, satisfied, and ready to smash your workouts.
This recipe is colourful, quick, and completely customisable - a perfect post-gym meal packed with protein, complex carbs, and healthy fats.
Ingredients
🌾 Base:
1 cup cooked brown rice or quinoa
½ tbsp olive oil or lime juice
🥑 Protein & Veggies:
1 can black beans, drained and rinsed
½ block firm tofu or tempeh, diced
1 red pepper, sliced
1 yellow pepper, sliced
½ red onion, sliced
½ cup sweetcorn
1 avocado, sliced or mashed
1 small bunch fresh coriander, chopped
🌶️ Seasoning:
1 tsp smoked paprika
½ tsp chilli powder (optional)
½ tsp cumin
Salt and pepper to taste
🥣 Dressing (optional but amazing):
2 tbsp vegan yoghurt or coconut yoghurt
1 tsp lime juice
1 tsp hot sauce or sriracha
